IL FRUTTONE

 

  The fruttone, short pastry with almonds.

You put bitter chocolate on the top, shrt pastry and a core of almond pastry and apuilot a quince jam inside. If the spumoni is the king of the ice creams, the fruttone is the king of pastes. Mr Ronzino and his grandson Marco spread the pastry in the oval cake mould, put the jam carefully and cover it with plenty of almond pastry and so, with a knowing smile, they create a fruttone of unchangeable quality from greneration to generation. The lost adjustment is melted chocolate, dense and black like Marco’s eyes, and it falls on the oval cake mould, now ready for baking. When ready, free from the cake mould, the fruttone, with its smell of fruit and will delight the palates with its contrast between the bitter chocolates on the top and the sweet filling.
