  ...cuochi pugliesi, che preparano in diretta le pietanze, spiegano, parlano con i visitatori, offrendo un vero e proprio itinerario dei sapori che va dalle interiora di agnello, i turinieddhi salentini, alle orecchiette alle cime di rape tipiche di Bari. E’ un’idea di successo dell’assessore alle risorse agroalimentari Enzo Russo che si avvale della preziosa collaborazione dei funzionari della Regione, Sergio D’Oria, Giuseppe Ferro e Pierluigi Ruggero, i suoi inseparabili bracci destri. La formula funziona se è vero che il padiglione della Regione Puglia è sempre quello che spopola. Peccati di gola... per promuovere il territorio.

  Parthi too, an Indian buyer, has visited the pavilion of Apulia to taste typical dishes, offered in the stand of the Region Apulia. The visitors of the mastodontic Bit of Milan were more than ever before tempted with delicacies. A very well equipped little restaurant with the best Apulian chefs is used as bait, where they prepare dishes made-to-order, while giving explanations and talking to the visitors, thus offering a real itinerary of savours which starts from the lamb entrails, the Salentino turinieddhi, and ends with the orecchiette alle cime di rape (typical short, ear-shaped pasta from Apulia with turnip tops,). This is a successful idea of Enzo Russo, the local authority for food processing resources, who avails himself of the precious collaboration of the regional officials, Sergio D’Oria, Giuseppe Ferro and Pierluigi Ruggero, his inseparable right hand men. This formula does work, as the pavilion of the Region Apulia is always crowded.
